SOUP RECIPES
Pumpkin Soup
· 200g pumpkin peeled and cubed
· 200g potatoes peeled and cubed
· 1 onion, chopped
· 2 ½ tbs butter
· 1 litre chicken stock
· 100 ml cream
· Seasoning and salt
Method:
a) Heat the butter in a saucepan; fry the chopped onions for a few minutes before adding the
pumpkin and potatoes.
b) Cook for a few minutes, add salt, cook until soft then add the chicken stock and seasoning.
c) Simmer for 45 min, add cream, blend and serve.
Spicy Mutton Soup
· 1 goat leg, deboned and cubed
· 1 litre water
· 2 onions, sliced
· 2 tsp, ground ginger
· 2 tsp, crushed garlic
· 2 tsp red chilli
· 1 stock cube
· Salt and pepper
· 1 tsp turmeric
· Rosemary leaves
Method:
a) Place mutton cubes in a saucepan, add water to cover them, bring to the boil and simmer for 45min.
b) Add all remaining ingredients except the rosemary, add water if needed and simmer for 10min.
c) Add rosemary leaves, simmer for 15min.
d) Serve hot in bowls.
Creamy Pumpkin and Spinach Soup
· 200g peeled and cubed pumpkin
· 100g spinach, chopped
· 120ml cream
· 1 onion, chopped
· 3 tbs butter
· 1 ¼ litre chicken stock
· 100ml cream
· Salt
Method:
a) Heat butter in a saucepan, add onions and cook until soft.
b) Add pumpkin and cook for 8min, add spinach and cook for 3min.
c) Add stock, bring to the boil and simmer for 1hr.
d) Liquidize with a blender, and then simmer for 10 min.
e) Season and mix cream to the soup, serve.
Spicy Sweet Potato Cream
· 1 onion, minced
· 1 tbs butter
· 4 cups cooked sweet potatoes, cubed
· 2 cups beef stock with a little salt
· 2 cups milk
· 1 tsp rosemary, shredded finely
· 2 tsp orange juice
· 1 tsp orange peel, minced
· 1/8 tsp black pepper
· Salt
Method:
a) Heat butter in a saucepan, add minced onion and cook until soft.
b) Add the sweet potatoes, stock, milk and rosemary, bring to the boil and simmer for 6min.
c) Add orange juice and peel.
d) Pour into a blender and blend. Add black pepper and salt then serve.
Chicken and Sweet Potato Soup
· 400g sweet potatoes, peeled and diced
· 1 litre chicken stock
· 2 tbs butter
· 1 onion, chopped
· 1 tsp chopped garlic
· 1 tsp chopped ginger
· 1 beef cube
· 100ml cream
· Salt and pepper
Method:
a) Heat butter in a saucepan, add onions, garlic and ginger.
b) Add crushed beef cube
c) Add sweet potatoes and sauté, this allows the flavors to mix.
d) Add chicken stock and simmer until the sweet potatoes are cooked.
e) Blend, mix with cream and serve.
