CAKES AND PASTRIES
Carrot Cake:
· 2/3 cup oil
· 1 ¼ cups brown sugar
· 1 ½ cups flour
· 1 ½ tsp baking powder
· ½ tsp bicarbonate of soda
· 2 tsp ginger powder
· 2 tsp cinnamon powder
· ½ cup chopped pecans
· 2 ½ cups grated carrots
· 3 eggs
· ¼ tsp salt
Method:
a) Pre-heat oven to 180?C
b) Beat together the oil and sugar
c) Mix all the dry ingredients in a bowl except the nuts.
d) Add half of the dry ingredients to the oil mixture and mix well.
e) Add the remaining dry ingredients bit by bit as you add the well beaten eggs.
f) Add carrots and nuts and mix well, spoon into a well greased baking tin and bake for 1hr.
Peanut Butter and Chocolate Cookies
· 85g peanuts
· 175g plain chocolate
· 85g peanut butter
· 175g butter, softened
· 175g sugar
· 300g self raising flour
· 2 tbs milk
Method:
a) Pre-heat oven to 180?C
b) Roast peanuts on a pan until golden brown, remove skin and set aside.
c) Roughly chop the chocolate and 2/3 of peanuts.
d) In a bowl beat together peanut butter, butter and sugar until light and fluffy.
e) Stir in the flour and milk with a wooden spoon and mix. Add the chopped chocolate and nuts,
mix well.
f) Shape the mixture into balls and flatten into cookie shapes, sprinkle nuts on top.
g) Bake for about 15min. or until golden but still soft.
h) Cool before serving.
Whole Meal Fruit Cake
· ½ cup oil
· ¾ cup brown sugar
· 2 eggs
· 1 tsp vanilla essence
· 2 ripe bananas, mashed until smooth
· 1 cup whole wheat flour
· 1 tsp baking powder
· 1 tbs lemon rind, finely grated
· ½ cup dried fruits
Method:
a) Pre-heat oven to 180?C
b) Beat the oil and sugar. Add eggs and vanilla essence and beat until smooth.
c) Add mashed bananas to the mixture and mix well.
d) Combine flour, baking powder and lemon rind in a separate bowl.
e) Add the flour mixture bit by bit to the mixture and mix well.
f) Add the fruits mix well, spoon into a baking tin and bake for 1hr.
Orange and Cranberry muffins:
· 1 cup fresh or frozen cranberries, chopped
· 2 tsp grated orange rind
· 2 tbs sugar
· 2 cups flour
· 1/3 cup sugar
· 2 tsp baking powder
· ½ tsp salt
· ½ cup butter
· ¾ cup orange juice
· 1 egg, slightly beaten
Method:
a) Pre-heat oven to 180?C
b) Combine cranberries, orange rind, and 2tbs sugar in a bowl and put aside.
c) Sift the flour and baking powder and mix with 1/3 cup sugar and salt.
d) Add ½ cup butter to the flour mixture and rub in until it forms crumbs.
Stir in the orange juice and egg, then the cranberry mixture.
e) Spoon batter in a greased muffin pan and bake for 20-25min or until golden and well cooked
in the middle.
f) Cool on a rack and serve.
Shortbread
· 500g butter, softened
· 1 cup caster sugar
· 4 cups cake flour
· ¼ cup corn flour
· ¼ tsp salt
· ½ cup icing sugar
Method:
a) Pre-heat oven to 130?C
b) Beat butter and caster sugar until fluffy.
c) Add all other remaining ingredients except the icing sugar.
d) Knead lightly and press on a greased tin. Prick with a fork and bake for 1hr.
e) Cut into fingers when still warm and sprinkle with icing sugar.
Sweet Potato Cakes
· 1 egg
· 2 tbs milk
· 1 tbs corn oil
· 2 boiled sweet potatoes, grated
· ¼ cup flour
· Salt and black pepper
· 2 spring onions, finely chopped
· Oil for frying
Method:
a) Break egg in a bowl and beat, add milk and mix.
b) Add corn oil, grated sweet potatoes, black pepper, spring onions and salt.
c) Add flour bit by bit mixing until soft but, firm.
d) Shape mixture into small cakes over a board.
e) Shallow fry until golden brown on both sides and serve.
Sweet Potato Bread
· 2/3 cup margarine
· 2 2/3 cups sugar
· 4 eggs
· 500g sweet potatoes boiled and grated
· 2/3 cup milk
· 3 1/3 cups flour
· 2 tsp baking soda
· 1 ½ tsp salt
· ½ tsp baking powder
· 1 tsp ground cinnamon
· 1 tsp ground nutmeg
· 2 tsp grated orange rind
· 1 cup pecans, chopped
Method:
a) Pre-heat oven to 180?C
b) Cream margarine and sugar in a bowl until fluffy.
c) Stir in the sweet potatoes, eggs and milk.
d) Add all the other dry ingredients except the pecans and mix well.
e) Stir in the pecans, spoon the batter into greased loaf pans and bake for 1hr.
Chicken Burgers:
· ½ kg chicken breast, minced
· 1 small onion grated and squeezed dry
· 1 tsp mixed herbs
· ½ cup fresh breadcrumbs
· ¼ tsp salt
· ¼ tsp black pepper
Method:
a) Place grill rack 15cm from heat and pre-heat.
b) In a bowl combine the chicken, onions, herbs, breadcrumbs, salt and pepper.
c) With moistened hands form the mixture into patties of desired size.
d) Place patties on a greased grilling rack and grill each side for about 5min.
When ready the patties should have clear juices when pricked.
Whole Meal Pancakes
· 2 eggs
· 1 tbs sugar
· 1 cup whole wheat flour
· ½ cup milk
· ¼ tsp salt
Method:
a) Beat the eggs, sugar and milk together.
b) Add flour and salt and whisk until smooth.
c) Heat oil in a pan and spread paste lightly.
d) Cook until well browned on both sides. Can be served with beverage of choice.
Mahamri
· 600g flour
· 10g instant yeast
· 3 tbs sugar
· 3 tbs butter
· ¼ tsp crushed cardamon seeds
· ½ tsp mixed spices
· ¼ tsp salt
· 2 egg yolks
· ½ cup warm water
· Oil for deep frying
Method:
a) Sift flour and mix well with yeast, salt, sugar, cardamom and mixed spices.
b) Rub butter into flour, make a well in the center and add egg yolks.
c) Add warm water, mix well until soft, cover and leave for 15min.
d) Heat oil in a pan over moderate heat; scoop a little mixture at a time forming balls.
e) Drop balls in the oil and fry until brown on both sides. Sprinkle with sugar and serve.
Whole Meal Spicy Mandazi
· 2 cups whole wheat flour
· ½ tsp baking powder
· 3 tbs sugar
· 1 tsp mixed spices
· ¼ tsp crushed cardamon seeds
· 1 cup milk
· Oil for deep frying
Method:
a) In a bowl mix the flour, baking powder, sugar, mixed spices and cardamons.
b) Add milk and mix, add water and knead until smooth but, it should not stick to the hands.
Cover for 20min.
c) Roll on a floured surface and cut into desired shapes.
d) Heat oil in a pan on moderate heat, and fry until golden brown on both sides.
e) Leave to cool before serving with beverage of choice.
Meat Samosa
· 200g minced meat, pre-cooked by boiling
· 50g onions, finely chopped
· 1 bunch coriander, finely chopped
· 1 tbs cumin powder
· 1 tbs lemon juice
· ½ tsp salt
· ¼ tsp chilli
· Samosa wraps
· Flour
· Water
· Oil for frying
Method:
a) Heat a little oil in a saucepan, add onion and coriander. Sauté until the onions become translucent,
add lemon juice, cumin powder, salt and chilli. Cook for a few minutes.
b) Add the pre- cooked minced meat. Cook for a few minutes and set aside.
c) Fill the wraps with the meat and spice mixture and bind with a paste of flour and water.
d) Fry in hot oil, over moderate heat until golden brown on both sides.
Cheese and Coriander Samosa
· 1 cup feta cheese
· 2 bunches coriander, chopped
· 6 ready- made samosa wraps
· Flour
· Water
· Oil for frying
Method:
a) Mix the feta cheese and chopped coriander well.
b) Fill the wraps with the cheese and coriander mixture.
c) Fold the wraps into parcels and bind with a flour and water paste.
d) Fry in hot oil over moderate heat until golden brown.
Vegetable Samosa
· 3 medium size potatoes, boiled and cut into small pieces
· ¼ cup peas and carrots pre-cooked by boiling
· 1 bunch coriander, finely chopped
· 50g onions, finely chopped
· 20g cumin powder
· 1 tbs lemon juice
· ½ tsp salt
· ¼ tsp chilli
· Samosa wraps( ready-made)
· Oil for frying
· A little flour
· Water
Method:
a) Heat a little oil in a saucepan, add onion and coriander. Sauté until the onions become translucent,
add lemon juice, cumin powder, salt and chilli.
b) Cook for a few minutes then add peas, carrots and potatoes.
Mix and cook for a few minutes then remove from heat.
c) Fill the wraps with the mixture and bind flour and water paste.
d) Fry in hot oil over moderate heat until both sides are golden brown.
